Tampa's beloved Harry Waugh Dessert Room celebrates its 40th year by teaming up with Hidden Springs Ale Works. The collaboration has produced three unique barrel-aged beers to mark the occasion.
Created in 1985, this special space cleverly repurposes wine barrels into intimate dining booths. Guests can choose from an impressive selection of 45 desserts and 15 different ice creams, all prepared fresh on-site. They welcome visitors nightly between 6 and 6:45 p.m.
The inspiration came from an enchanting evening at Harry Waugh's home. As head of Château Latour, Waugh hosted Bern and Gert Laxer, serving them port, cheese, and nightcaps. This experience inspired them to create their dream dessert haven.
Dessert lovers come for fan favorites like the smooth Banana Cheese Pie, perfectly torched Baked Alaska, and decadent S'mores Bread Pudding. The drink menu features everything from hard-to-find wines to vintage ports, sherries, and madeiras.
To pair with your dessert, Bern’s Director of Spirits Nathaniel Wilson teamed up with Hidden Springs CEO Josh Garman to create 3 signature special releases to celebrate 40 years of decadent dessert.
- Bananas Foster Inspired Imperial Sweet Stout (12% ABV): Aged in E.H. Taylor, Jr. bourbon barrels and brewed with real bananas, brown sugar, and cinnamon for a rich, caramelized finish.
- Carrot Cake Inspired Imperial Pastry Sour (10.5% ABV): Aged in Meyers Rum barrels with roasted pecans, cinnamon, vanilla, and sweet carrot for a layered, indulgent flavor.
- Imperial Sweet Stout with Roasted Macadamia Nuts (12% ABV): Aged in Nashville Company Distillery bourbon barrels, featuring in-house roasted macadamia nuts for a velvety, nutty profile.

While dinner guests get priority, anyone can reserve a spot just for dessert. Those wanting something less sweet can enjoy carefully curated cheese plates.
