Palmette Brasserie and Bar will open in early 2026 at The Westin Tampa Bay on Rocky Point. The waterfront eatery could debut as late as the end of January, though officials haven't announced a firm date.
The new spot will feature indoor and outdoor seating with water views at 7627 W. Courtney Campbell Cswy. A bar opens onto the patio. Guests can access the waterfront.
Executive Chef Saravanan Appadurai will lead the kitchen, preparing dishes that include pan-seared snapper, mojo-marinated steak frites, a 16-oz ribeye, and pappardelle with Florida rock shrimp.
A pizza oven sits at the center of the open kitchen. It will turn out a variety of fresh-baked pizzas.
Shareable plates include Truffled Frites with Citrus truffle gremolata and Meyer Lemon Aioli, Crispy Brussels Sprouts with Calabrian chili-citrus dip, and Ahi Tuna Crudo with Florida Strawberry, Fennel, Pistachio, and Fresno Chili. Salads and other options are available too.
The bar program will serve coastal-inspired cocktails. The indoor/outdoor bar creates a connection to the water for those drinking and dining at Palmette.
The team behind Palmette describes the venue as having "a relaxed, tropical feel inspired by Florida's light and breezy vibe." The space takes inspiration from the palmette motif, with fronds rising from a single base and opening outward.
This design reflects how shared meals bring people together, according to the owners. The establishment combines dining and drinking options in one waterfront location that promises to attract locals and visitors alike.
