Sparrow Rooftop hired Executive Chef Tony Van Hang. A fresh Asian-fusion menu debuted at the EDGE District bar atop The Moxy hotel at 1234 Central Ave.

Van Hang spent decades cooking. He grew up in Vietnam, then worked stateside in kitchens for years. His background made him perfect to overhaul what diners eat here.

Bao buns now appear on the menu. So do sushi and ceviche. Dumplings and shumai stuck around — guests loved them too much to drop. The Moxy says Van Hang mixes old-school methods with new Asian tastes, crafting plates that taste great and catch your eye.

"Chef Hang shares our commitment to the exceptional quality and creativity our guests have come to expect, and he's already bringing exciting energy to the kitchen," said Eric Davies, President of Wurzak Hotel Group, according to I Love The Burg. "His focus on expanding our sushi and small plate offerings will further elevate the culinary experience at Sparrow."

Davies mentioned Van Hang collaborates with the mixology crew. They want each dish to match the cocktails that made this rooftop bar famous.

New programs launched with Van Hang's arrival. Sparkles & Sushi happens Thursday nights — a ladies' night built around sushi, champagne, and cocktails. Paradise Found takes over Sundays, bringing in local DJs for a house party vibe.

Doors open at 5 p.m. Thursday through Saturday and stay open late. On Sunday they start at 1 p.m. and close at 9 p.m.

The rooftop looks out over Tropicana Field in the EDGE District. Spring and summer are approaching, which means ideal weather for eating and drinking outside.
